Most of the Mexican Restaurants in the US are opened and operated by Mexican immigrants; the majority of which, arrive from unfortunate social provinces where the lack of knowledge and economic possibilities destined them cook and showcase a “Mexican food” what most know today as TEX-MEX.
While Tex-Mex is salsa, chips and nachos, the Authentic Mexican Cuisine is rich in French cheeses , salads, pastas, breads, meats and Spanish-Mediterranean spices.
In the book - Una Mirada Historica a través de la Comida - A Look at History through Food – it points out that while eating is a biological act, cooking is a cultural, social and economic act. Cuisine permits us to identify the group from which an individual comes.
